Cherry vanilla cake

Cherry time! 🍒

Cooked this one during dinner and now we have a perfect desert.

It's light, fluffy and the cherries are amazing this time of year. Use fresh ones if you can! You won't regret it!


Ingredients:

• 300 gram de-seeded cherries • 275 gram flour • 3 eggs • 250 ml cream • 200 gram sugar • 1 tsp vanilla extract • 15 gram baking powder •


1. Pre-heat your oven at 180°C. Get a baking tray and line it with baling paper and oil. De-seed the cherries.

2. Mix the eggs, sugar and vanilla extract.

3. Mix the flour and baking powder and sift. Add the cream into the egg mixture and the flour and baking powder after that.

4. Mix well. Dump the batter into the baking tray and drop the cherries on top of it.

5. Bake for 35 minutes and let cool down completely before getting a slice. It's hard, I know... But it's for the best! Serve with powdered sugar, whipped cream or cherry jam. Or maybe even some vanilla ice cream.
