Jamie Oliver's Cookbook Club Chasing Smoke part 2

Sorry for the lack of home made/written recipes, but I'm having a blast with the Cookbook Club from @jamieoliver and the book if the month, Chasing Smoke by @honeyandco

Tonight I couldn't choose what to make, so I made too much, but it was so good. And this cute little chicken was so lovely and small that it was perfect for the two of us.

Tonight I made the following recipes:

• Spatchcocked chicken with Mediterranean spices (page 134)

• Spiced courgettes with goats' yoghurt (page 82)

• Figs with cheese and pomegranate dressing (page 81)

• Charred corn with honey and chilli butter (page 53)

I altered the recipe for the figs and turned it into a salad. I couldn't find find Manouri cheese and the alternative, Haloumi, really isn't a favorite of mine, so I had to change things a little bit. I used a really tasty goats' cheese instead on some rocket salad.

It was really amazing and the chicken paired really well with the figs. From now on I'm definitely gonna brine my chickens!

And the marinade! Try it! The whole house smelled of lovely spices.
