Seabass on orzo

Those who follow my stories, might have seen this dish already. I promised a recipe quickly, but I kinda forgot anyway.

Promises... what are they worth really? Right 🙈

Got this amazing seabass fillets from my favorite fishmongers (@monkfish_by_de_graaf) as always!

Ingredients (3-4p):

• 1-2 seabass fillets pp • 200 gram orzo • 1 large leek • 400 gram fresh spinach • 300 gram frozen peas • 3 garlic cloves • 250 ml cooking cream • freshly grated parmigiano • splash of white wine • (optional) 1 green chilli pepper • salt and pepper • 2 lemons • 200 gram smoked bacon strips • lemonpepper •

1. Check your fillets for bones, cut the skin to prevent the fish from curling up during cooking. Season with salt and lemonpepper and set aside.

2. Boil your orzo while you prepare the rest of the dish. Grate your garlic, parmigiano and clean and thinly chop your leek.

3. Get a large pan and fry the bacon until crispy. Add the leek, chopped green pepper and garlic and sauté until cooked. Add the peas and spinach. As soon as the spinach is done, add the cooking cream and let simmer for a few minutes. Taste and add seasoning, together with the parmigiano to taste, the white wine and some lemon zest.

4. As soon as the orzo is cooked, drain and add to the sauce. Stir well.

5. Fry the fish for a few minutes on each side and serve with an extra slice of lemon on top of the orzo.
