Shortbread cookies

Scotish shortbread is one of my favorite cookies and they are super easy to make and have only 4 ingredients. From start to finish they take about 30 minutes to make and maybe even less to finish once they are done 😇 I think they are best served with a glass of milk or tea! Ingredients: • 225 gram plane flour • 170 gram room temp. butter • 85 gram powdered sugar • teasp. vanilla extract • chocolat (optional) • 1. Pre-heat your oven at 170°C. Sift the flour into a large bowl and add the powdered sugar, butter and vanilla. Mix well... I just use my hands. You end up with a very smooth dough pretty quickly.
2. Role the dough out into a large sheet that's between 0,5 and 1 cm. You can bake the whole sheet and cut the cookies into shape as soon as they come out of the oven, or make round or rectangular shapes before you put it in the oven.
3. Pierce the cookies with a fork so they'll cook more evenly. The cookies won't rise, but they will expand slightly, because the butter in the dough will melt a little. They won't hold their perfect shape. I made 2 long, narrow sheets and cut them into strips as soon as they came out of the oven and the dough was still soft and hot. 4. When you do it like this, 13 minutes in the oven will do. The round ones were just from some leftover dough. The cookies are not supposed to get golden. They should be pale and soft. 5. After the cookies cooled down, I melted some pure chocolat and dipped them in there. I added the coconut to the round ones, so the chocolat won't melt when you hold them! Now get yourself some milk, some netflix and try to leave some cookies for someone else 😌
