Asian minced meat with pumpkin

Asian minced meat with oven roasted pumpkin and garlic rice.
A real winner and lovely to scoop into a small bowl while enjoying good company. Dig in family style!
Ingredients (3-4p):
• 500 gram ground pork or beef • 1 small pumpkin • 3 portions rice • 6 garlic cloves • 2 tbsp light soysauce • 2 tbsp dark soysauce • 1 tbsp rice wine • 2 tbsp honey • 1 tbsp sambal oelek • 1 tbsp sesame oil • punch of spring onions • salt and pepper •
1. Pre-heat your oven at 200°C. Clean your pumpkin and chop into small cubes. Cover the pumpkin in some oil, salt and pepper. Put them on a baking tray on some parchment paper and roast in the oven for 25 minutes.
2. While the pumpkin is in the oven, start with finely chopping the garlic and steaming the rice. Mix the sauce ingredients into a small bowl with ¼ of the garlic. The other part of the garlic in for the rice.
3. Get your wok and make sure it's nice and hot. Heat up some oil and fry your minced meat. Once it's cooked and starts to brown, add the sauce. Stir well and let the sauce thicken. As soon as this has happened, turn off the heat and stir half of the finely chopped spring onions into the meat.
4. Get another large pan or wok and again heat up some oil. Saute your garlic until golden and quickly add the cooked rice. Stir well until the golden garlic in well spread into the rice. Turn off the heat and stir in the other half of the spring onions.
5. Put on a large plate, rice first, then the pumpkin and finally the minced meat. Garnish with spring onion, chili flakes and or sesame seeds.
