Bell pepper and goats cheese pasta

Ordered some lovely food at @crisp_nl the other week. As soon as it arrived I tried this amazing goats cheese from @demolkerei. I definitely needed a vessel for this lovely cheese.

So a bell pepper pasta sauce it is. Perfect sweet sauce combined with salty, creamy goats cheese. A real winner!


Ingredients (2p):

• 200 gram pasta • 2 red bell peppers • 1 onion • 4 garlic cloves • 250 gram chicken thighs • 1 tbsp tomato puree • splash of white wine • 75 ml cooking cream • salt and pepper • chilli flakes • zest of ½ orange • goats cheese • cherry tomatoes •


1. Clean your bell peppers, onion and garlic. Cut into large chunks. Heat up a lightly oiled pan until it's super hot. Grill your bell peppers, onions and garlic until blistered with black spots. Be aware, the bell peppers need the most time, than the onions and the garlic only needs a minute. Take out of the pan and set aside.

2. Slice up your chicken and cook with some salt and pepper in the hot pan. While the chicken is getting nice and golden, get a kitchen machine or mixer and puree the vegetables, together with the tomato puree. Cook the pasta while you do all this.

3. When the chicken is cooked, add the vegetable puree together with the wine and chilli flakes. Simmer until your pasta is cooked.

4. Drain your pasta. Add the cooking cream, orange zest and cherry tomatoes into the sauce. Stir well and add the pasta. Taste if it needs more salt.

5. Scoop on your plate and garnish with a good amount of goats cheese. If your, like mine, has super tasty oil, add a little drizzle of this as well. Leave the jar on the table... you will definitely want more of this super tasty cheese.

PS. The chicken is optional. It would still be perfect without.
