Buddha Bowl

We eat sushi bowls on a regular base, but when a friend of mine posted a photo of her Buddha bowl I knew I had to have one! Healthy multi-grain rice with sushi vinegar for flavouring and a variety of vegetables and tofu fried in my home made sambal (recipe from @whattocooktoday) with a miso/almond sauce (recipe from @thehealthymaven) on the side. Pickled cucumber for an extra kick... Oh and another tasty surprise: baked banana! Soft and sweet and really awesome paired with the sambal.
It was so tasty!
It's definitely a keeper.
