Cashew pesto

Not too long ago I found an article that said you could make pesto with cashew nuts and since pine nuts are super expensive, I had to give it a go. And I'm sorry if any Italian people are feeling insulted, but... I think I like it over the pine nuts pesto 🤐 it's so smooth and creamy! Ingredients pesto (3 to 4 portions): • 100 gram roasted cashew nuts • 100 gram olive oil • 50 gram parmigiano • 1 garlic clove • salt and pepper • large handful of fresh basil with stalks and leaves • I think we all know how this works. Put everything in your kitchen machine and blend 'till you reach the consistency of your liking. Don't forget to taste if you need a little more salt. Always add a little bit of pasta water when you mix it in with the pasta. I added chicken and fresh cherry tomatoes. I paired it with a spinach salad with white cheese, red onion and blackberries. Add some capers, balsamic vinegar, crushed cashew nuts and good olive oil. Even the bf liked the salad, and that doesn't happen very often.
