Cheesy pasta with meatballs

My bf and I have a problem. Not a serious one and it's easy to live with, but it's not how most people behave...

We buy ridiculous amounts of... Cheese.

When we go to the market it's not strange that we come home with 6 or 7 blocks of cheese. Now of course we are from Gouda and there's cheese everywhere... It's still a little out of proportion.

Last night I made a pasta with meatballs, spinach and cheese sauce from all the leftover cheese and dry ends we still had lying around in the fridge. You can easily switch any of those cheeses for your personal favorite or just use one or two different kinds.


Ingredients (3p):

• 250 gram pasta • 3 pork sausages • 1 onion • 3 garlic cloves • 250 ml cooking cream • 300 gram spinach • salt and pepper • 1.5 cup of cheese (I used Brie, Gorgonzola, Gouda and Parmigiano).


1. Start with skinning the sausage and making small meatballs out of the filling. While you do this you can put on some water for the pasta. Finely chop your onion and garlic.

2. Get a large pan and heat up some oil or butter. Throw in the meatballs and fry until golden. Add the chopped onion and garlic and fry as well.

3. When the onion and garlic are cooked, add the fresh spinach one hand at a time. You need space in the pan to stir. Start with cooking your pasta.

4. Once all the spinach is cooked, add the cream with some salt and pepper. Add the cheeses and let it melt. Let simmer and thicken for about 5 minutes.

5. Finally drain the pasta and add into the sauce. Turn off the heat and let the sauce thicken for a few minutes before serving.

Serve with a tomato salad or a nice green salad.
