Chinese chicken with peanuts

Okay, so I made 3 portions of this lovely Chinese chicken dish, but clearly we were so hungry we finished it all. I wanted to bring some with me for lunch tomorrow, but all that was left was some rice. It's light and super tasty and if you like cooking Asian food, pretty much all the ingredients are in your pantry anyway!


Ingredients:

• 400 gram chicken thighs • 100 gram Chinese chives • 5 dried chillies • pak choi • 3 garlic cloves • 5 cm ginger • 75 gram unsalted peanuts • 1 tsp sichuan pepper •


Marinade:

• 1 tbsp cornstarch • 2 tbsp light soy sauce • 1 tbsp Shaoxing rice wine •


Sauce:

• 1 tbsp sugar • 1 tsp dark soy sauce • 2 tsp light soy sauce • 1 tbsp rice vinegar • 1 tsp sesame oil • 2 tbsp water •


1. Slice your chicken into small pieces and marinade in the ingredients listed for this part of the dish. Set aside.

2. Finely chop your garlic and ginger and cut your vegetables into large chunks. If you can't find Chinese chives, young spring onion will do.

3. Mix the ingredients for the sauce into a small bowl, this way you can easily add them all at ones. You can also grill your peanuts in a dry pan (optional) and set them aside for later.

4. Put some oil in a large pan or wok and start with frying the chilli and sichuan pepper. Add the ginger, stir well and quickly add the chicken and garlic.

5. When the chicken is almost completely cooked, add the vegetables and stir fry for a few minutes.

6. Finally add the sauce and peanuts and stir well on high heat. The sauce should become thicker by itself, but if this doesn't happen, add a little bit of cornstarch mixed in some water to thicken the sauce.

Perfect with white rice and some extra chilli or fried onions. If you don't like it spicy, leave out the chilli or... If you like a runny nose, add some extra!
