Things like this, that only require a spoon, I always eat to fast and too much of. This Chinese fried rice with pork belly and Chinese sausage if so comforting. It's salty and a little sweet and a good scoop of sambal binds it all together.
Ingredients:
• 150 gram corn • 150 gram carrot • 150 gram frozen peas • 2 Chinese sausages • 300 gram diced pork belly • 2 eggs • 4 spring onions • 3 garlic cloves • 3 portions of day-old rice (or boil a non-sticky kinda rice and rinse with cold water after boiling) •
Sauce:
• 2 tbsp light soy sauce • 2 tbsp dark soy sauce • 2 tbsp oyster sauce • 2 tbsp sugar • 2 tbsp shaoxing rice wine • 2 tsp sesame oil •
1. Start with your rice. I didn't have left-over rice from the day before, so I boiled a non-sticky kinda rice and rinsed it under cold water once it was cooked. Make sure it's completely cold and set aside.
2. Mix all the sauce ingredients together and set aside as well.
3. Start with frying your pork belly and steaming the Chinese sausage. Once both are cooked take them out of and set aside. Slice the sausage. Chop up your carrot, chop your garlic and spring onion.
4. Heat up oil in a large wok and throw in the meats. Stir fry for a few minutes and add the garlic, carrot, peas and corn. Stir fry again for a few minutes.
5. Add the egg and stir again. When all the egg is cooked, add the cold, dry rice. Fry on high heat.
6. Add the sauce and make sure all rice is coated in a nice layer of the sauce. You end up with a dry, fried rice with a light brown colour. Super easy and super tasty! Add a big spoon of sambal or hot sauce and...
Enjoy!
