Last night we had this spicy pasta dish with a Spanish twist. Shrimp and chorizo pasta with green asparagus.
Ingredients (2p):
• 200 gram spaghetti • 200 gram dried chorizo sausage • 200 gram raw, peeled shrimp • 300 gram green asparagus • 1 red bell pepper • 3 garlic cloves • 1 tsp paprika powder • ½ tsp cayenne or chipotle pepper (powder) • handful chopped coriander • 2 tsp dried oregano • 1 lime • 1 avocado • salt and pepper • pickled onion • olive oil •
1. Start with boiling a large pan of water and chopping all your vegetables and chorizo. Do this how you prefer. Chop your garlic into thin slices.
2. Heat up a little bit of vegetable oil in a large pan and start frying your chorizo. The chorizo will give you a nice, good amount of red oil to work with later. Take the chorizo out and set aside, leaving the oil in the pan.
3. Throw in the bell pepper, asparagus and garlic and stir fry until cooked. Boil your pasta while you are doing this.
4. Add the shrimp to the vegetables and add the salt, pepper, oregano, paprika powder and cayenne pepper. Taste if it's spicy enough and add extra flavours to your liking. Stir fry until the shrimp are cooked.
5. Add the chorizo back in and add juice of half a lime and the coriander. Now stir in the cooked pasta. Turn off the heat and add a little bit of good quality olive oil if needed (the flavoured oil is you 'sauce').
Garnish with pickled onion, some extra coriander and half an avocado per person.
Enjoy!
