Crispy chicken on pasta

I think we all love ourselves a good crispy chicken from time to time and it's even better with pasta and bacon, right? This easy meal is so comforting and you can add whatever vegetables you like. I choose for artichokes this time. Ingredients (2p): • 1 large or 2 small chicken breasts • 1 egg • 3 tbsp flour • 1 cup panko breadcrumbs • salt and pepper • garlic powder • • 200 gram pasta • 150 gram bacon • 1 can artichokes • 3 garlic cloves • splash of white wine • 4 tbsp frehly grated parmigiano • spring onion • 1 tsp chilli flakes • 2 tbsp toasted pinenuts • olive oil • marinated olives • 1. Start with heating up a large pan and toasting your pine nuts. Use the same pan to fry your bacon. Set both aside. Also start boiling your pasta. 2. Season your chicken with salt, pepper and garlic powder. If the chicken breast is very thick, butterfly the chicken or use a meathammer to pound it and make it more flat. Beat up the egg in a bowl. Now cover the chicken in flour, than the egg and finally the panko breadcrumbs. 3. Use the bacon fat with some extra oil to fry the chicken on medium heat until golden and completely cooked. Take the chicken out of the pan and use the same fat/oil to fry your garlic and artichokes. 5. Add the bacon back into the pan, together with the pine nuts, chilli flakes and spring onion. Add the pasta and add a splash of the white wine and the parmigiano. Stir well for 1 minute. 6. Slice the chicken into thin strips. Scoop the pasta onto the plate and put the chicken on top. Add olives or something like capers if you like those. Enjoy!
