Curcuma (or turmeric) is a healthy spice you see a lot these days. It stains everything and makes your tongue feel funny, but the flavour is amazing. Tonight I made this cauliflower and curcuma soup with crispy sage, fish and chorizo bits. Good chunk of bread and your meal is complete!
Ingredients:
• ½ cauliflower • 1 white onion • 2 garlic cloves • 750 ml vegetable broth • 1 tbsp almond shavings • chorizo • sage leaves • fish (I used codfish, but you can use pretty much any type of white fish or even mackarel or prawns) • 1 big tbsp circus powder, or 3 to 4 cm fresh rood •
1. Start with browning you almonds in a dry pan. Take out of the pan and set aside when they are golden.
2. Put some oil in the pan and fry your sage leaves until crispy. Take these out of the pan too and set aside. Do the same with your chorizo bits and fry until crispy.
3. Cut your onion and garlic into big chunks and saute in a large pan. Add the curcuma and stir well. Add the broth and cauliflower. Bring to a boil and simmer until the cauliflower is cooked.
4. Bake your fish in some butter while you puree the cauliflower soup until smooth.
Combine everything on your plate and add a nice chunk of bread.
Enjoy! And don't spill it on ANYTHING or it will be yellow for the rest of your life 😇
