Dill and lemon orzo

Pure comfort and fresh flavours. This dill and lemon orzo with simple chicken is easy to make and even easier to eat. The chicken is just salt, pepper and garlic powder, the recipe will be for the orzo!
Ingredients (3p):
• 250 gram orzo/risone • 1 onion • 3 garlic cloves • 1 lemon • salt and pepper • 3 tbsp white balsamic vinegar (you can use a regular one, it will just change the colour) • 1 tsp sugar • 4 tbsp fresh cut dill • optional: 1 tsp chili flakes • freshly grated parmigiano • 1 courgette • 2 cups chopped carrots •
1. Start with cooking your orzo in salted water. You can use rice or other pasta if you like. Chop your onion and garlic fine and your carrot and courgette in small chucks.
2. Get a large pan and heat up some oil. Saute the onion and garlic. As soon as the onion is cooked, add the carrot. Stir fry for about 7 minutes. Make sure they are cooked well and al dente. As soon as this happens, add the courgette. Add salt and pepper to taste.
3. Zest one lemon and squeeze out the juice. Add both to the veggies, together with the balsamic vinegar and sugar. Stir well for one last time and turn off the heat.
4. Add the cooked orzo and fresh dill. Taste and choose if you would like to add chili flakes. Use as much dill and lemon as you like. Balance everything with and taste in between. Add salt to your liking. Add a nice fresh grate of parmigiano.
Serve with chicken or a nice piece of fish. Add more veggies (or different kinds) and keep it vegetarian.
