Easy cauliflower traybake

Sometimes you just need easy and quick comfort food that doesn't feel too heavy.

This cauliflower traybake with minced meat and burrata is just that.


Cauliflower:

• 1 whole cauliflower • 4 garlic cloves • 1 tsp turmeric • 1 tsp paprika • 2 tsp Italian herbs • 1 tsp salt • black pepper • 1 tsp chilli flakes • 4 tbsp olive oil •


Meatballs:

• 500 gram ground meat • 1 egg • 2 tbsp breadcrumbs • 4 garlic cloves • 1 tsp onion powder • 2 tsp Italian herbs • 1 tap paprika • 1 tsp salt • ½ tsp white pepper • 2 tsp hotsauce • ½ cup freshly grated parmigiano •


Other ingredients:

• 2 burrata • fresh basil leaves • pickled chillies • red pepperberries •


1. Pre-heat your oven at 200°C. Blance your cauliflower until al dente. Mix all the ingredients for the cauliflower together. Drain the cauliflower and coat in the mixture. Place on a baking tray and put in the oven for 15-20 minutes. I used the grill/broiler setting for some tasty golden pieces.

2. Meanwhile mix all the ingredients for the meat. I call them meatballs, but they're not really balls. Make them as pretty as you want, I went for a more 'authentic' look. Fry them in some oil until golden and cooked completely.

3. As soon as the cauliflower looks nice and golden, take out of the oven and put the meatballs on top. Break apart of the burratas and put all over the tray. Put the other one in the middle and slice open.

4. Garnish with the basil, chilli peppers and pepper berries. Add a drizzle of olive oil.

Enjoy as it is or make it a pasta dish or add bread.
