Extra veggie pasta dish

It may seem like this dish is lacking some greens, but don't let your eyes fool you! Can you spot the zucchini? Ingredients meatballs (2p): • 250 gram mixed minced meat (50/50 pork and beef) • 3 garlic cloves • 1 teasp. chilli flakes • 1 teasp. dried oregano • 1 teasp. dries basil • 1 teasp. dried sage • salt and pepper • 1 teasp. smoked paprika • 1 egg • Ingredients sauce: • 70 gram tomato puree • 1 can skinned tomatos • 1 small onion • 3 garlic cloves • 1 teasp. chilli flakes • 2 teasp. dried oregano • 1 teasp. dried basil • 1 teasp. dried parsley • salt and pepper • Other ingredients: • 150 gram spaghetti • one zucchini • cherry tomatos • 1. In some countries, you can buy pre-cut zucchini 'spaghetti', but I made my own. I used one of those 'pencil sharpener' kind of grater, so I got nice long strings, but you can also use a regular one and grate the zucchini lenghtsways. 2. Mix all the ingredients for your meatballs and make some nice, medium sized balls. Fry them in some butter or oil and as soon as they're cooked scoop them out and set aside. 3. Use the oil to fry your onion and the garlic for your sauce. Add the chilli flakes and tomato puree and fry shortly.
4. Add the canned tomato and all the other ingredients. Add a little bit of water and let simmer for a few minutes.
5. Throw the meatballs back in and add the cherry tomatos. 6. You add the zucchini 'spaghetti' to the pasta water as soon as the pasta is cooked. Drain the pasta together wit the zucchini. The zucchini is very thin, so it doesn't need to be cooked really. I like my zucchini al dente, but you can put it in the water a little earlier if you like it a little softer. 7. When everything is cooked, mix it all together and you're ready to dig in!
It also is a great way to make sure kids eat their veggies!
You could also make it with just zucchini and no pasta! It is also a perfect dish to leave out the salt, for people who have to eat less or no salt at all. The herbs and tomato provide enough flavour on their own!
