Fried Rice

So I'm quite happy that this fried rice turned out as tasty as the last time I made it, 'cause I never wrote down how I made it and it was fingers crossed 🤞🏻 that I could recreatie it. I think i did 🤔


Ingredients (4p):

• old rice (3-4 portions) • 700 gram shrimp • 4 chinese sausages • 1 large carrot • 4 shallots • 5 garlic cloves • thumbsize piece of ginger • 2 chilli peppers • 5 spring onions • 1 cup peas • garlic oil or vegetable oil •


Sauce mixture:

• 2 tbsp dark soy sauce • 2 tbsp light soy sauce • 2 tbsp ouster sauce • 1 tbsp sugar • 1 tbsp rice wine • 1 big tsp MSG • black pepper •


1. It's important to work with old, cold rice. I cook extra rice one or two days in advance, but leftover rice from Chinese takeaway is also perfect. Don't use fresh rice. It doesn't work as well.

2. Slice the Chinese sausage and clean your shrimps if needed. Grate the carrot, finely chop the garlic and ginger and slice your shallots, spring onions and chilli peppers into thin slices. Put everything aside.

3. Heat up the garlic or vegetable oil in a large wok or deep pan. You need room to toss everything around. Sauté the garlic, ginger and shallots.

4. As soon as everything is golden, add the sausage and shrimp. Toss around until almost cooked. Than add the carrot, peas, chillies and ⅔ of the spring onions. Fry for a few minutes.

5. Add the rice and mix everything well. Now it's time to add the flavour. Mix the sauce ingredients well and add them bit by bit to the rice while scooping and tossing it around on high heath. Taste and see if it needs anything extra.

Serve with a crispy fried egg, the leftover spring onion and any topping you like! If you don't use MSG, you might need some extra salt and sugar.
