Full meal miso soup

Believe it or not, but underneath all this is a super tasty and light miso broth.
Miso soup is lovely and light but it needs a little more to be a full meal. I added fried egg, minced meat and green tea noodles to make it more filling. You can add whatever vegetable you like. I went for Chinese cabbage, broccoli, tomato and mushrooms and spring onion as a garnish.
Ingredients broth:
• 1 liter unsalted vegetable broth • wakame seaweed flakes • 1 big tbsp dark miso paste (be aware that your miso paste might need a different ratio) •
Ingredients minced meat:
• 250 gram pork minced meat • 1 tbsp fermented red bean paste • 1 tbsp light soy sauce • 1 tbsp sugar •
Ingredients fried eggs:
• 2 eggs • 1 tbsp light soy sauce • 1 tbsp mirin • pinch of garlic powder •
The rest is easy as 1-2-3. Prep the veggies, egg and minced meat. Cook your broth. Keep tasting it! Cook your noodles in the broth and plate everything.
This broth is very light, both in stomach feeling and taste. I could eat a ton of it! Great to keep in mind for the warm summer days to come.
