Green sambal curry with coconut fish

Remember the green 'sambal' I made not so long ago? Turns out it makes one hell of a curry! Add 3 big tablespoons of the sambal, a stock cube and a can of coconut milk and you're good to go. You can find the recipe a few posts back!

I made a vegetable curry with oven baked fish with a coconut crust.


Ingredients fish:

• 2 portions firm, white fish • 1 egg • 4 tbsp flour • ½ tsp turmeric • ½ tsp curry powder • ½ tsp salt • ½ tsp garlic powder • 2 tbsp breadcrumbs • 4 tbsp grated coconut •


1. Pre-heat your oven at 200°C. Pat dry your fish with a paper towel.

2. Mix the ingredients except for the egg and flour.

3. Cover your fish in flour, tap off access and get covered in the beaten egg. Last but not least cover the fish in the coconut mixture.

4. Place the fish on a oven plate on a piece of baking paper. Turn on the grill setting and grill the fish for 15 minutes. Keep an eye on it to make sure it doesn't turn too dark.

Serve on top of the rice and enjoy with the vegetable curry!
