Home made ravioli

So I spend this afternoon making my first ever ravioli. Yes I know... It's weird. I cook the biggest meals, but I never made ravioli before.


Ingredients pasta dough (4p):

• 200 gram semolina • 100 gram flour • 3 eggs • 3 tbsp flour • water if needed •


Ingredients filling (4p):

• 200 gram mushrooms • 200 gram ricotta • 1 small white onion • 2 garlic cloves • salt and pepper •


Ingredients sauce (2p):

• 200 gram bacon bits • 200 gram spinach • 200 ml cream • 1 small onion • 1 garlic clove • black pepper •


1. Sift the flour for the dough. Slightly mix the eggs with the oil and add to the flour. Mix with your hands for about 15 minutes. The dough may feel tough at first, but will get smooth the more you knead it. Wrap is plastic foil and rest for at least 30 minutes.

2. Finely chop the mushrooms and the garlic and onion for the filling. Fry the finely chopped garlic in a dry pan in small portions. Fry the onion and garlic separate in some oil. When the mushrooms and onion are cooked down, mix them together with the ricotta and some salt and pepper.

3. Before using the pasta, knead again for about 5 minutes. Use a pasta machine or rolling pin to make nice, thin cheets of the pasta. I used a pasta machine and went for setting 7. This may vary on your pasta machine.

Fold the filling into the pasta and close well around the edges. You can use water to make it stick.

4. Fry the bacon. When almost done, add the onion, garlic, black pepper and spinach. At the cream right at the end.

5. Boil the pasta for 6 minutes (test one piece of pasta to check how long yours should cook. This could very when they are larger or have another thickness.

6. Mix everything well and enjoy your pasta!

These ravioli with mushrooms are also amazing with oil and sage or a simple tomato sauce!
