I have been looking all over the internet for a good recipe for a kebab spice mix. I found many, so I tried to pick all the things I liked and add them to my own taste. So... Here's what I did! This mix is good for about a kilo of meat. Ingredients: • 2 tablesp. smoked paprika • 1 teasp. salt • 1 teasp. black pepper • 1 teasp. white pepper • 1 teasp. dried chilli flakes • 1 teasp. korianderseeds • 1 teasp. thyme • 1 teasp. cinnamon • 2 teasp. garlic powder • 2 teasp. onion powder •1 tablesp. oregano • 2 teasp. cumin • I'm a huge fan of oregano, so I added more than in most recipes. Same goes for the pepper and chilli flakes. I like spicy food, so if you don't, just add half of the amound I used. It might need some extra salt, but I prefer to add more when I've tasted it, than finding out there's too much in it already. Smoked paprika isn't a must, you can use a regular paprika powder, but the smokey taste adds to the feeling that it should be grilled on open fire, while it's not. I always use the smoked version! Mix it in with your minced meat, or use it as a rub for a nice piece of lamb or pork. Store in airtight jar or container.
