Korean style meatballs

Korean style meatballs. Super easy to make and super satisfying to eat. Perfect over rice, but also a perfect snack. I'm not a football fan, but I can imagine this would be an amazing meatball with beer and some sports.

I paired it with some veggies, quickly stir fried in garlic, ginger, soy sauce and kimchi.


Ingredients:

• 500 gram ground beef/pork • 4 garlic cloves • thumbsize piece of ginger • 3 spring onions • 1 egg • 3-4 tbsp breadcrumbs • 1 tbsp soy sauce • ½ tsp salt • 1 tsp sugar • 2 tbsp Korean chilli paste • black pepper •


Glaze:

• 4 tbsp sugar • 3 tbsp soy sauce • 1 tbsp rice vinegar • 1 tbsp Korean chilli paste • 2 tbsp rice wine • sesame seeds •


1. Start with finely chopping your garlic, ginger and apring onions. Mix this with the other ingredients and the ground meat. I choose a 50/50 beef and pork, but either will do. If you want to use ground chicken, you might need more breadcrumbs. Make small meatballs.

2. Get a large pan and heat up some oil. Fry the meatballs until fully cooked. Don't use a too high heat. They burn easily.

3. Once the meatballs are cooked, mix the ingredients for the glaze in a small bowl and poor over the meatballs. Turn up the heat and stir well, until the meatballs are completely coated in the glaze and the glaze has thickened. Turn off the heat and garnish with the sesame seeds.

4. For the vegetables I just fried some garlic and ginger. Stir fried some mushrooms, green asparagus and bean sprouds with my favorite kimchi. You can use your favorite store bought brand or a home made version. If needed add some soy sauce and sugar (taste first, it depends on your kimchi if you need this).

Serve over white rice!
