Lebanese flat bread pizza

Super easy meal today! It's not really a pizza, but it kinda looks like one.
This Lebanese flat bread is so versatile and amazing as a pizza base. Make sure you always have some in your freezer. You never know when you need them and they don't take a lot of space!
Ingredients (4 flatbreads, 2 pp):
• 4 flatbreads • 1 garlic clove • 60 gram cashew nuts • 40 gram parmigiano • 4 tbsp olive oil (use less than you would normally use for pesto, you don't want a soggy, fatty pizza) • bunch fresh basil • ½ courgette • smoked chicken filet • mozzarella • cherry tomatoes • salt and pepper • pinch of oregano • grated cheese •
1. Pre-heat your oven at 200°C. Put the garlic, cashews, parmigiano, olive oil and basil in your kitchen machine. Blend until smooth-ish. Taste and add salt and pepper to taste.
2. Get your flat bread and use 1 tbsp of pesto per piece. Spread out evenly. Add a thin layer of grated cheese.
3. Thinly slice your chicken and courgette and chop up the tomatoes and put on your flat bread. Bake in the oven for 8 minutes.
4. When done, add the cold mozzarella and a pinch of oregano. And that's that! You could also use your favorite tomato sauce instead of pesto.
