Lemon chicken with olives and dates

It's warm in Holland. Very warm. And it's gonna stay like that for a while. This means quick and easy food with bold and fresh flavours. This chicken dish with lemon, olives and dates is all of those things.

Add a good piece of bread to scoop up the juices in the pan!


Ingredients:

• 400 gram chicken thighs • 3 tbsp oil • 1 tbsp dried oregano • 1 tsp dried thyme • 1 tsp onion powder • 3 garlic cloves • 2 tsp honey • salt and pepper • 2 lemons • large green olives, a good handful • (medjoul) dates, about 5 large ones • 2 tbsp capers • pomegranate seeds • burrata • (haricots vert) green beans •


1. Mix the oil, oregano, thyme, onion powder, garlic (thinly sliced), honey, sale and pepper together in a bowl. Taste before adding the chicken. Add the juice and zest of 1 lemon to the marinade.

2. Marinade the chicken in the oil and lemon for 15 minutes. Use this time to pre-cook the beans and cut the olives and dates.

3. Heat up a little oil in a pan and cook the chicken. Don't turn the heat up too high, because you don't want to burn the honey.

4. As soon as the chicken is cooked, add the olives, dates, capers and cooked green beans. Stir well.

5. When everything is shiny and glazed in sticky oil, add the zest of 1 lemon and add the slices to the dish. Garnish with pomegranate seeds (optional) and add the burrata in the middle of the pan.

Eat with bread, rice or cut the chicken before cooking and stir through some pasta.
