Food waste is a big no-go for me, so when I found out some of me lemons had lived their best lifes, I decided to make a lemon-ginger sauce, to go with my fish and sugar snaps.

Ingredients:
• zest of 1 lemon • juice of 2 lemons • 2 tbsp ginger syrup • 3 tbsp sugar • 2 tsp sesame oil • 3 tbsp soy sauce • 1/2 cup vegetable broth • 2 tbsp grated ginger • 1 thai red chilli • 3 garlic cloves • 1 tbsp honey • cornstarch •
This sauce is lovely with fish, shrimp or chicken and you can add pretty much any vegetable you like. The sauce is nice and sour, sweet and thangy. If you don't like it spicy, just skip the chilli. You can actually mix everything in a bowl, except for the garlic (which I fry a little before adding the other ingredients) and the cornstarch is to mix with some water and add to thicken the sauce in the end. It's lovely and this recipe is for enough sauce for 2 people!
