Lemon-pepper pasta

A super quick and easy one for tonight. Lemon-pepper pasta.


Ingredients (2p):

• 150 gram bacon • 200 gram pasta • zest of 2 lemons • juice of 1 lemon • 1 cup freshly grated parmigiano • 1 cup freshly grated pecorino • 3 garlic cloves • ½ red chilli pepper • optional vegetables of your choosing • black pepper • pinch of salt •


1. Start with a large pan of salted water to cook your pasta. Get a frying pan to fry your bacon until crispy. Take the bacon out of the pan but leave the bacon fat in there.

2. Grate your cheeses and set aside. Take the zest of the 2 lemons and set aside as well. Get the juice of 1 of the lemons. Grate the garlic cloves as well.

3. Add a little bit of oil or butter if the bacon didn't release enough fat. Sauté the garlic briefly. Add the lemon zest and drained pasta. Safe the pasta water! Add a cup of the pasta water to the pasta together with the cheeses and juice. Lower the heat and stir well.

4. Add the black pepper and chilli pepper, together with the bacon, which you chop into small pieces. You'll end up with a creamy lemon sauce. Add whatever veggies you like... or don't. That's up to you! You can also skip the bacon and serve the pasta with fish.
