Mango sauce

Sweet and a bit spicy and super tasty. What else could you ask for on a sunny day after work. Exactly!
This chicken in mango sauce with a ton of veggies is the way to do it. Here's the recipe for the sauce, so you can add whatever you like! It's also super easy to keep vegetarian.
All you need to do is to put all the sauce ingredients in the blender, except for the lemon leaves and cashew nuts, those go in separately.
Ingredients:
• 2 ripe mango's • 2 chilli peppers • 2 garlic cloves • 1 tbsp rice vinegar • 2 tbsp light soy sauce • 2 tbsp fish sauce • juice from 1 lime • 2 tbsp honey (less or more depending on the sweetness kg the mango) • thumbsize piece of ginger • 1 tsp turmeric • 2 tbsp dried coconut • 4 lime leaves • handful unsalted cashew nuts •
Give your cashew nuts some extra dimension by frying them really quick in some oil. Take them out and set aside to throw back in later. The lemon leaves go in together with your vegetables. The sauce goes in last and only needs a short simmer.
Of course you can add extra spice, or leave it out. It's all up to you!
