Yesterday I tried to make my own corn tortillas and although they were tasty, they were not perfect and therefor I will post the chicken and salsa recipes only. As soon as I am happy with my tortillas, I will post those as well!
First, the recipe of the chicken! The mango and pineapple salsa will come in later!
Ingredients:
• 3 chicken breast filets • 2 chili peppers • 30 ml oil • ½ small white onion • 4 garlic cloves • 2 tsp cumin • 1 tsp cayenne • 2 tsp coriander seed powder • 5 tbsp ketchup • juice of ½ lime • 1 tbsp sugar • 1 small tomato • ½ red bell pepper • pinch of salt • broth •
1. Start with poaching your chicken whole in the broth. Simmer for 15 minutes. Once the chicken is cooked, pull apart with two forks and set aside.
2. Mix all the other ingredients together with a kitchen machine until everything is chopped up into a sauce. If you don't like it spicy, add less chili peppers.
3. Get a large pan with some hot oil and throw the pulled chicken back in. Add the sauce and stir well on high heat for about 5 minutes or until most of the moisture out of the sauce has evaporated.
Pair with tortillas or add over nacho chips. I added black beans and a mango-pineapple salsa. It's also a great chicken recipe to add into a salad or in enchiladas with cheese.
Enjoy!
