Minced lamb with grilled veggies

This suuuper easy middle-eastern minced lamb is amazing with a lightly seasoned couscous and grilled vegetables.

Le boyfriend and I are trying to eat healthier, but it's pretty hard.


Ingredients:

• 250 gram minced lamb • 1 tsp cumin seeds • 1 tsp coriander seeds • 2 garlic cloves • ½ tsp black pepper • ½ tsp salt • 1 tsp dried mint • 1 tsp dried oregano •


You can grill the vegetables the way you like it. I grilled my aubergine in a pan first and put in on a baking tray with the sweet potatoes and gave them all together 20 minutes on 200°C.

The bell peppers are just from a jar and I only gave them some extra flavour by grilling them in a pan.

The couscous was cooked in broth.

I fried the cumin and coriander in a dry pan before grinding them with the other herbs.

Put the minced meat in the pan with the garlic and all the herbs and spices and fry until fully cooked.

Plate everything and add some, salt, pepper and white cheese to the vegetables.

Super tasty, a lot of veggies and real comfort food.
