Miso Salmon

It has been a while since I posted a recipe of my own. Since the Cookbook Club started, most posts are about that and I can only refer to books and page numbers.

This one is one of my own.

Miso salmon with green beans and white rice. Super easy and quick and maybe even a bit healthy?


Ingredients (2p):

• 2 pieces of salmon • 300 gram green beans • green of spring onion • 3 tbsp white miso paste • 1 tbsp soy sauce • 2 tbsp mirin • 1 tbsp sake • 1 tbsp sugar • 2 grated garlic cloves • 1 tsp freshly grated ginger • 1 red chilli pepper • sesame seeds •


1. Start with mixing the miso paste, soy sauce, mirin, sake, sugar, garlic and ginger together. You might need a few tbsp of water if it's too thick. Blance your green beans until they are al dente.

2. Coat the salmon in the miso sauce. I use a brush for this, but you could also use a spoon or make your hands dirty.

3. Stir fry the beans together with the green of the spring onions while, in a separate pan, you fry the marinated salmon in a little bit of oil. Flip the salmon twice and coat in some more sauce if you do. The rest of the sauce is for the beans.

4. Lower the heat of the salmon and simmer until cooked, you don't want the miso to burn (please, don't cook for too long, no one likes dry salmon. When it's cooked for 60%, it's perfect).

5. Stir fry the beans with the sauce, add a splash of water if needed. Stir in the red chilli pepper and some of the sesame seeds.

Serve on white rice with extra sesame seeds on top.
