Last night I made a super tasty chicken no-oven bobotie. Bobotie is an African dish and normally made with minced meat and put in the oven. I however didn't feel like waiting 30 for my food to be ready and there is a faster way that is just as tasty!
Ingredients (4p):
• 400 gram chicken thigh • 400 gram green beans • 1 bell pepper • 2 apples • 1 white onion • 3 garlic cloves • 1 egg • 200 gram creme fraiche • 50 ml milk • 3 tsp curry powder • 2 tsp turmeric • 1 tsp ground up coriander seeds • 1 tsp cinnamon • 1 tsp ginger • salt and pepper • 1 chilli pepper • 75 gram raisins • rice for 4 people • some extra turmeric to colour the rice •
1. Soak your raisins in some warm water while boiling your rice with a small tsp of turmeric.
2. Finely chop your onion, garlic, ginger and chilli pepper. Boil your green beans until al dente.
3. Put some oil in a large pan and fry your onions, garlic, ginger and chilli pepper. When they start to get golden edges, add the chicken with some pepper and salt. While you wait for your chicken to cook, mix the egg with the creme fraiche and milk.
4. When your chicken is cooked, add the dry spices and fry a little more to make sure all the flavour comes out. Add the diced bell pepper, green beans and diced apples.
5. Stir everything up and add the creme fraiche mixture. Let simmer for a few minutes while stirring on low heat. This is the moment to taste if your dish needs more salt. Make sure the egg doesn't get solid and chunky. Turn off the heat when the sauce thickens a little bit, but not too much.
6. When your rice is 99% cooked, add the raisins and stir them through the rice. Make sure they are nice and hot.
And that's it! If you don't like spicy food, leave out the chilli. Serve the bobotie with some chutney!
The spices are nice and warming, even if it's not spicy. It's an amazing winter dish. It's also great with boiled potatoes or flat bread.
Add some cauliflower instead of chicken for a vegetarian version!
