One person banana pancakes

The recipe will be for just the pancakes! You can top it of with anything you like! I used yoghurt, nuts, banana, honey and some pomegranate, but you could as well go for whiped cream and berries! Ingredients: • 1 ripe banana • 1 egg • 2 tablesp. self raising flour • pinch of salt • As you can see, this recipe is beyond easy and perfect to make when you are eating alone. (Of course, double the recipe if you are with two).

1. Mash up the banana as smooth as possible. Add the egg and mix well.

2. Add the flour and salt and mix again. Heat up some butter in a pan and scoop in 2 tablespoons per pancake. Use a low heat setting, 'cause they burn easily.

3. Flip the pancake as soon as the sides are cooked or when you see brown edges on the bottom side. 4. Stack your pancakes and add any topping you like! They are also great with bacon and maple syrup or with some chocolat! This version of pancakes is lactose free (as long as you skip the yoghurt and/or cream toppings) and a little bit healthier than normal pancakes. You can also skip the butter as long as you use a good non-stick pan. 🍌🍌🍌🍌 enjoy!
