Pasta with faux pesto

Pasta with faux pesto. Why? Well it looks like pesto and it kinda tastes like it, but there's no basil and no pine nuts. I made this 'pesto' with baby spinach and cashew nuts. So creamy and tasty!
Ingredients (2p):
• 220 gram pasta • 100 gram spinach • 150 ml olive oil • 1 garlic clove • salt and pepper • handful of cashew nuts • 1 cup grated parmigiano • tomato • pumpkin seeds •
1. Boil your pasta while preparing the pesto.
2. Take half of the spinach, the olive oil, nuts, salt and pepper and parmigiano and mix well with a blender, kitchen machine or mortar. It the sauce a little thick? Add oil. Is it a little runny, add some extra nuts and cheese.
3. When the pasta is boiled, mix with the pesto and the other half of the spinach.
4. Garnish with extra parmigiano, tomato and the pumpkin seeds.
So easy and so tasty!
