Pineapple fried rice 🍍 Sauce ingredients: • 3 tablesp. soysauce • 1 tablesp. fishsauce • 1 tablesp. honey • 2 tablesp. ginger syrup • 1 tablesp. sesame oil • 1 tableap. curry powder • 1 tablesp. paprika • 1 tablesp. turmeric • 2 tablesp. oil • black pepper • Ingredients: • one day old rice (2 cups uncooked) • 1 large carrot • 1 cup peas • 1 red bellpepper • bean sprouts • 4 garlic cloves • 3 cm fresh ginger • spring onions • parsley or coriander • 1/2 fresh pineapple • 2 Thai red chillies • chicken (optional) • 1. Mix all the ingredients for the sauce mixture and safe for later.
2. Cut the carrot, pineapple and bellpepper in small pieces and chop the garlic and ginger. If you use chicken, make sure to cut in small pieces as well. 3. Start with frying the ginger, chillies and carrot until the carrot is cooked. Add the chicken, peas, garlic and bellpepper.
4. Now it's time to add the sauce and pineapple. Slowly add the rice and fry on high heat. Once everything is mixed well, you can add finely chopped parsley or coriander (whatever you prefer) and the spring onions. I like to add the bean sprouts on top, instead of mixed in, so they stay fresh and crunchy. You can use fresh rice, but make sure it's cooled down completely before you use it, otherwise it will be too sticky and break down. One-day-old rice from the day before is better!
