Since I found these awesome mexican soft corn tacos, I keep trying to come up with new dishes! This time we had some with pork belly and an amazing blonde ale called 'Or Xata' from @thebruery . An amazing flavourful beer with cinnamon, vanilla en a refreshing and sweet taste. Perfect with the spicy pork and sweet and sour mango salad!

Ingredients pork:
• 800 gram thick sliced porkbelly • 2 tsp smoked paprika • salt and pepper • 1 tsp onion powder • 1 tsp garlic powder • 1 tsp chilli flakes • 2 tsp dried oregano •
Ingredients salad:
• 1 mango • 1 red bell pepper • fresh coriander • lemon juice of half a lemon • olive oil • small red onion • 1 tsp chilli flakes •
Other ingredients:
• pickled jalapeños • green jalapeño relish (or any of your favorite salsa) • black beans • spring onions •
1. Fry your pork belly in some oil with some salt and pepper until it starts to get brown and a little crispy on the outside. Take out of the pan and set aside.
2. Slice up all the ingredients for your salad and throw them in bowl. Heat up the black beans.
3. Slice the pork belly into pieces and get a clean pan. Throw the pork back into the pan and add the other ingredients, together with some oil. Make sure the pork is covered in the spices and heat up well, but make sure you don't burn the dry spices.
4. Heat up your corn tortillas.
5. Put everything together on a tortilla with your favorite sauce and in our case an amazing beer, perfect with the mexican flavours!
