A while ago I made steamed coconut buns with one of @jamieoliver's recipe's. I had a lot of leftover dough and without knowing if it would work, I threw it in the freezer. Last night I moved it to the fridge and this morning I made sure it had time to go back to room temp. The sad weather made me crave for cinnamon and so I gave this thing a try! The recipe is for the whole portion of dought. That's enough for 14 buns. Ingredients: • 1 can of coconutmilk • 2 cans of self rising flower (use the empty coconutmilk can) • salt • 6 tablesp. dark brown sugar • 2 tablesp. cinnamon • melted butter • condensed milk • 1. Mix the coconutmilk with the self raising flour and a pinch of salt. It's a pretty sticky dough, so flour your workspace well.
2. Roll the dough out to a big sheet as rectangular as possible.
3. Mix the sugar and cinnamon. Put a thin layer of the melted butter on the dough and divide the sugar and cinnamon over the sheet. Roll the sheet into a nice 'sausage' and cut into thick slices and put them in those little cupcake paper molds inside your bamboo steambasket. Steam for 9 minutes.
4. Cover with a good amound of condensed milk and another pinch of salt ❤ They are best when still warm!
