Red onion soup

Vegetarian red onion soup with potatoes and red beets. I actually wanted to make French onion soup, but that's boring! Ok, no... I'll be honest. I bought a shitload of red onions for only 1€ and I had to use some of them! Ingredients: • 4 red onions • 1 garlic clove • 3 stalks of thyme • 1 bay leave • 50 gram butter • 2 tbsp flour • 1 litre vegetable broth • 200 ml red wine • pepper • 1 baguette • cheese • 3 pre-cooked red beets • 3 large potatoes • 1. Cut your potatoes into small cubes and boil them with a pinch of salt. Rinse under cold water and set aside in cold water. 2. Slice your onion into half rings. Heat up a pan and throw in the butter. Fry the onions until soft with brown edges. Add grated garlic and black pepper. 3. Add the 2 tbsp flour and stir until the flour is cooked. Add the wine, broth, thyme and bay leave. Simmer for 20 minutes. 4. While the soup is cooking, cut up your beets into cubes, similar sizes as the potatoes. Add the beets and potatoes for the final 5 minutes of cooking. 5. Put the baguette in the oven with some cheese and grill until the cheese is melted. Add on top of your soup. Take the bay leave and thyme stalks out of the soup. My thyme was very young, so it was soft enough to just eat it. Enjoy!
