Rice salad with smoked mackerel

Another quicky! Riceberry (not a berry, just a red type of rice, if you can't find it, use whole grain rice) with gremolata, haricots verts (or green beans), courgette, mint, jalapeños and smoked mackerel. Fresh flavours and a lovely fatty fish. Eat the dish room temperature and add some extra lemon for a fresh and sour kick.
Don't be afraid of a whole fish! Filet lack the tasty bits like the meat close to the tail and around the belly. Mackerel is easy to clean. Just get a knife or fork and follow the bones starting in the middle.
I could easily eat a whole one just by myself, but it's better to share a whole mackerel with 2 or 3 people 😇
