This super tasty and spicy sambal sauce I make pretty often. It contains all these things I always have in my pantry, so it's perfect for those days when you want to have a cheap meal. Normally I eat it with only vegetables and I keep it vegetarian, but this time I added some super tender beef.
Ingredients:
• 300 gram steak • 1 red bell pepper • 200 gram green beans • rice • 1 red onion • 3 garlic cloves • 1 thumb of ginger • 2 tbsp tomato ketchup • 3 tbsp soy sauce • 1 tsp sesame oil • 1 tbsp rice vinegar • 2 tbsp dry sherry or sake • 1 tsp spicy sambal (or a red chilli pepper) • 2 tbsp sweet sambal (like manis) • 1,5 tbsp sugar • black pepper •
1. Start with boiling your green beans and rice. Chop your onion, garlic and ginger pretty small and set aside.
2. Mix the tomato ketchup, soy sauce, sesame oil, rice vinegar, sake, sambal and sugar in a bowl.
3. Get a super hot pan with some oil and grill your steak whole on both sides for only a few minutes with some black pepper. Put them on a plate and let them cool down before slicing them into thin strips. Cook the steak a little more raw than you would normally serve it. The hot sauce later in the process will cook the steak a little more.
4. Fry your onion, garlic and ginger in some hot oil. Add the chopped up bell pepper and cooked green beans and stir-fry for a few minutes.
5. Add the sauce mixture and mix on high heat. When it starts to boil, turn off the heat and add the pieces of beef.
6. Serve on white rice or with noodles!
The dish is a little spicy as you may suspect, but it really depends on the sambals you use. I use a mild one and spice it up with a little bit of a very spicy version. Start less spicy and add more spicy ingredients until you like the flavour. Too spicy? Add a little extra sugar to even things out.
Enjoy!
