Spicy shrimp

Fishy Friday is early this week. I felt like eating shrimp for a few days already and I still had some kimchi in the fridge, so I decided to combine the two. So spicy garlic shrimp with jasmine rice, kimchi and sweet and sour cucumber. I must confess... The kimchi is store bought. I hope to make it myself one these days! Ingredients shrimp: • 300 gram raw shrimp • A shitload of garlic (pardon my French)• 1 tbsp of sambal • cornstarch and water to thicken the sauce • 1 lime • Ingredients cucumber: • 1/2 cucumber • white vinager • 3 tbsp sugar • pinch of salt • 1 red chilli pepper • 1. Chop your garlic nice and fine. Fry this in some oil.
2. Add the shrimp, lime juice and sambal and thicken the sauce with the watered down cornstatch if there's a lot of water coming from the shrimp. Tip: Mixing the cornstarch with some water first will give you a nice smooth sauce without cornstarch lumps. 3. The cucumber is something I make at least once a week. I love it with almost every rice dish. Chop the cucumber in bite-size pieces and cover them with vinegar. At the sugar, salt and chilli and let it sit for a few (10 will do) minutes. 4. Add the shrimp to some white rice with the kimchi on the side. Eat the kimchi with a lettuce leaf and some shrimp.
