Spicy, sweet and sour

So, my boyfriend calls this dish 'The spicy tower of awesomenes' and although you can make it as spicy as you like, we prefer it pretty spicy. The fresh mango and pineapple make it nice and sweet. Even without the chicken, it's really good. So there is a vegetarian option as wel. Ingredients: • 4 chicken thighs • 1 fresh mango • 1/4 fresh pineapple • 4 small Thai red chillies (or less, or none, whatever you prefer... or more 😅) • 1 onion • fresh ginger • chilli sauce (just use your favorite) • 1 cup peas or any other veggie like beans or broccoli • water-cornstarch mixture if needed • 1. Chop everything. Cook your green vegetables.

2. Fry your onions and chillies in some oil. Add the chicken and grated ginger and cook untill the chicken is fully cooked.

3. Add the vegetables, mango and pineapple. As soon as everything is nice and hot, you add a good amound of chilli sauce and cook that for a few minites. If the sauce is a little runny, you add some water-cornstarch mixture. You can put some coconut on top or maybe even some fried or spring onions.


I like it most with rice, so it can soak up the spicy sauce really well. You can also make some coconut rice with it, to cool down the spiciness. I went for sweet and sour cucumber as a side dish, simply because I love it!
