Sun-dried tomato pesto

Since I found out cashew nuts are great to make pesto, I make pesto all the time. This time I made a pesto and tapanade hybrid with a base of semi-sundried tomatoes. I think this would taste amazing on the gnocchi as well! I served it with good pasta and a smoked pepper mackerel I bought from the fish stand at the market. Super easy and super tasty. Ingredients pesto: • 150 gram semi-sun-dried tomatoes • 2 tbsp sun-dried tomatoes • hand full cashew nuts (unsalted) • 1/2 cup grated parmigiano • black pepper • olive oil and the oil from the sun-dried tomatoes • It's easy. Mix all the ingredients together, puree well and taste. Fine-tune where needed and mix with your hit, cooked pasta and a few tbsp starch water from the pasta. That's it! Add the mackerel and maybe some fresh tomatoes and a squeeze of lemon juice. This meal is done in under 15 minutes. Enjoy!
