Sweet Asian mushrooms

So, my signature dish is sweet pork belly, but I wanted to try and make a vegetarian version. Since the original dish is all about the pork, I needed a proper replacement for that. A lot of mushrooms it is!
Ingredients:
• 600 gram mushrooms (I used champignons, shitake and oyster mushrooms) • 3 garlic cloves • 4 tbsp soy sauce • 4 tbsp oyster sauce • 4 tbsp brown sugar • 1 tbsp fish sauce • black pepper •
1. Cut up your mushrooms is big chunks. No need to go small. Chop your garlic finely.
2. Heat up enough oil and start with frying the thinly sliced ginger. Add the mushrooms. Make sure your pan is large enough and the heat high enough. You want to brown the mushrooms and not cook them and make them soggy.
3. When the mushrooms are almost fully cooked, add the garlic and black pepper.
4. Add the soy sauce and oyster sauce and heat up well. Finally add the sugar and stir until the sugar is dissolved.
I added some extra chilly peppers and paired the dish with fried spring onions with crispy garlic.
Add a large bowl of white rice and enjoy!
