Sweet bellpepper pasta

Made a lovely sweet and spicy pastasauce out of bell peppers to pair with some Gnocci. Ingredients: • 4 red or yellow bell peppers • 3 garlic cloves • 1 white onion • 200 gram canned tomatos • salt and pepper • dried chilli flakes • dried oregano • fresh basil • cherry tomatos • chicken (optional) • smoked paprika powder • 100 ml cooking cream • 1. Turn the oven on up to 220°C and if possible, set it on the grill-setting. Put the bell peppers on an oven tray and grill until the skin of the peppers starts to blacken. Take them out of the oven and set aside to cool down completely. Skin them and take out the seeds. 2. Fry your chicken (cut in small pieces) in some oil with some paprika powder, salt and pepper. Take them out of the pan and set aside. 3. Put some new oil in the pan and fry your onion, chilli flakes (a small teaspoon will do) and garlic until golden. Add the skinned bell peppers and canned tomatos and cook for a few minutes. 4. Boil your pasta or gnocci while you puree the sauce with a blender until smooth. 5. Add the chicken back into the pan with the sauce and some fresh basil, oregano and cherry tomatos. Add salt to taste. Finish with the cooking cream. You will end up with a smooth, creamy sauce with a spicy and sweet taste. Perfect to leave the chicken out and eat as a vegetarian or vegan dish. The sauce is also lovely on a sandwich ❤ If you don't like spicy, leave out the chilli!
