Sweet potato gnocchi

The's a first time for everything and tonight I made sweet potato gnocchi for the first time. They turned out lovely and I'm definitely gonna make this one and the normal ones again soon. I tossed them around in some pesto, added pesto chicken and spinach and a good chunk of mozzarella. It was lovely! Ingredients: • 350 gram cooked sweet potato • 1 egg yolk • 250 gram flour • pinch of salt • 1. It's easy as 1, 2, 3... Cook them sweet potato (I diced them before cooking so they cook really quickly). Once they are cooked, drain and let cool. 2. Mash the sweet potato's with some salt. Add the egg yolk and the flour a little bit at a time. The dough is done when it's not really sticky anymore. 3. Roll small balls out of the dough and pull them over a fork or one of those special gnocchi boards (I had mine for years and I never used it before). 4. Set the gnocchi aside and let them dry for 30 minutes. I made sure they didn't touch each other so they wouldn't stick. 5. Cook them until they start to float (only a few minutes really) and serve in your favorite sauce or just a lovely oil. Enjoy!
