Sweet sate

It might not be weather for BBQ, but at least we can have a taste of it! Together with a sweet and sour mango salad it almost felt a little, tiny bit like summer. Ingredients sate: • 500 gram chicken thighs • 1 red chilli pepper • 4 garlic cloves • 2 tsp freshly grated ginger • 1 tsp smoked paprika • 2 tsp curry powder • 1 tsp ground up coriander seeds • 1 tsp laos powder • 4 tbsp sweet soy sauce (ketjap) • salt • Ingredients mango salad: • 1 cucumber • 1 mango • 1 red chilli pepper • 1 cup water • 1,5 cup vinegar • half a red onion • 3 tbsp sugar • pinch of salt • 1. Start with taking the seeds out of the cucumber. Cut it up in small cubes and add the water, vinegar, sugar, salt and chilli pepper. Set aside for about 2 hours. 2. Cut your chicken thighs into chunks and add all the ingredients listed for the chicken. This should also marinade for about 2 hours or more. After marinating you can put them on a square, but this is not necessary when you pan fry the chicken. I just like the looks of it and it adds to the BBQ feeling. 3. Grill the chicken in a pan with a little bit of oil. Keep an eye on it, because the marinade burns easily. 4. Cut your mango into similar cubes as the cucumber. Add the cucumber and chilli (without the vinegar) to the mango and add the thinly sliced red onion. Mix well. 5. Add white rice. I also added some peanut sauce (not in the picture, cause it doesn't look that pretty). Want a leaner version? Use chicken breast and leave the peanut sauce and rice out and add a salad. Enjoy!
