Sweet soy eggplant

Hmm... Taking good pictures when it's getting dark so early, is really hard with just a phone. I made this sweet soy eggplant as a side dish, but I would deffinitly eat them like this on meatless monday! Ingredients: • one eggplant • 2 tbsp soysauce (salt) • 2 tbsp oystersauce • 1 tbsp of honey • 2 tbsp of cooking sake • black pepper • water-cornstarch mixture • 3 cloves of garlic • oil • 1. Heath the oven to 200°C. Cut the eggplant in half and put some oil and pepper on both sides. Grill for 15 minutes, add the garlic on top with some extra oil and grill for another 15 minutes. As soon as the eggplant is ready, take it out of the oven and set aside.
2. Get a small pan and heat op the soysauce, oystersauce, honey and sake. Thicken the sauce with some cornstarch mixture.
3. Cut the eggplant in big chunks. Turn off the heat and throw the eggplant in the sauce and make sure all the pieces are coated in a nice layer of sauce. I added some sesame seeds as a garnish. The soft eggplant texture was great with nice and fluffy white rice! I was actually happy that my boyfriend doesn't like eggplant, so there was more for me.
