'Taco' pasta

I'll be honest with you... Normally I would call a dish like this blasphemy. But sometimes things just sound delicious and I want it. This is one of those dishes: Taco Pasta. Yes... The things you would normally put in your taco/tortilla, but now in a tomato sauce with pasta. Trust me! It's super tasty and I'm sure both the Mexicans and Italians will forgive me.
Ingredients (3-4p):
• 300 gram pasta • 250 gram minced beef • 1 yellow onion • 3 garlic cloves • 1 can skinned tomatoes • 1 can (100 gram) chipotle pepper in adobo • 200 gram black beans • 2 bell peppers • 2 avocado's • fresh coriander • 1 tsp ground coriander • 1 tsp paprika powder • ½ tsp cumin powder • 1 tbsp cacao • salt and pepper • 1 lime • grated cheese •
1. Start with chopping your bell peppers, onion and garlic. Heat up a pan with water for the pasta and another pan with some oil for the sauce.
2. Saute your onion and garlic in the oil. When they start to brown, add the minced beef. As soon as this is cooked, you can add the bell peppers together with the dry spices, salt and pepper. Fry for a few minutes. Start boiling the pasta while doing so.
3. When the bell peppers and meat are cooked, add the chipotle peppers (chopped first) and the canned tomatoes. Let all this summer for about 5 minutes. While this is cooking, slice the avocado, chop the lime and grate the cheese.
5. Add the black beans to the sauce for the final minute and heat up. I just used pre-cooked canned black beans. Taste if the sauce needs any salt and pepper. As soon as it reaches the flavour you like, add the drained, cooked pasta and stir well.
6. Serve with the avocado, lime and fresh coriander. Grate cheese on top (not on the picture) and add anything you like from sour cream, jalapeños or sweet corn. It's your party and the 'rules' already went out of the window before we even started.
