Vegetarian sweet potato dish

I missed my vegetarian monday so I moved it to friday (don't worry, sunday will be vegetarian as well). Made things up along the way and I'm deffinitly gonna make this again! Ingredients: • 2 large sweet potatos (1 per person) • 300 gram pre-cooked lentils • handful cherry tomatos • spring onions • 1 teasp. grated garlic • 1 teasp. grated ginger • 1 tablesp. Garam Masala • lettuce • pomegranate • soft goat cheese • 2 tablesp. yoghurt • egg (optional) • parsley • juice of half a lemon • salt and pepper to taste • 1. Cook your sweet potato the way you like it. I roasted mine in the oven in tinfoil until soft, but you could also boil yours. I like mine whole, but it's no problem to cut it in big chunks. 2. Mix the garlic, ginger and Garam Masala spice mix together with some oil. Heat your pan and fry the mixture briefly.
3. Add the pre-cooked lentils and heat up well. Add a few tablespoons of water if it starts frying. When it's nice and hot, add the 2 tablespoons of yoghurt, the lemon juice, the cherry tomatos and half of the spring onions. Season to taste with salt and pepper. I added a chilli peper to make it really spicy.
4. Put everything on your plate together with the goat cheese and pomegranate seeds. Add the leftover spring onions and some parsley. I like to add some fresh salad. The egg is optional, but mine were getting old, so I wanted to use them before I had to throw them out.
